FOCUS: Boneafide Broth Co | Bone Broth Snacks | The world’s healthiest packaged snacks
Challenge: Boneafide Broth Co’s founders, Chris and Sharleen Kelly, started from humble beginnings. Their plan was to create a clean, preservative-free fresh-bone broth from Australian chicken. The Kellys wanted consumers to instantly and easily enjoy the health benefits of fresh-bone broth without the arduous 24-hour task of making it themselves.
It very quickly became apparent the bone broth needed to be shelf stable for ease of shipping as well as making the product more portable for consumers. The challenge was to find a way to turn the clean bone broth into a shelf-stable product without the use of preservatives or flavourings. The Kellys partnered with Richard Boyd to find a solution to a clean, shelf-stable bone broth
Solution: The three partners narrowed their solution to solving the shelf stability challenge down to two options — a liquid, or powder format. The liquid option required large amounts of sodium and other preservatives for shelf stability that did not fit with their vision for the product. The powder option achieved by drying the liquid broth resulted in the destruction of nutrients, which also did not deliver their vision for the product.
Further research led the partners to a century-old drying process, and although it wasn’t an instant success, they persevered, realising this was the future of their product. The drying process had minimal impact on the nutrient value and flavour of the bone broth, which meant no flavourings or preservatives were required.
The earlier trials were unsuccessful until the partners discovered a special method of cooking the bone broth that helped keep its shape during the drying process. This is when the bone broth snacks were created. Their first chicken broth bites were definitely a “love or hate” tasting product and they realised other flavours were needed. They subsequently developed new products and flavours such as Beef and Tomato Bites; Macadamia and Lemon Myrtle Broth Cookies; and Coconut Yogurt Fruit and Macadamia Cookies for vegans.
